    teaspoon olive oil
  • 1

    egg
  • 1

    frozen reduced-fat whole-wheat waffle
  • 1

    vegan burger

  • Spray a skillet with non-stick spray and heat oil in the skillet. Break the egg into the skillet and ‘fry’ it.
  • While the egg is cooking, toast the waffle in a toaster or toaster oven, and heat the boca patty in the microwave–one minute per side, on high.
  • To assemble: place the toasted waffle in a bowl, and top with the heated boca patty. Slide the fried egg on top of the patty. Salt to taste, or serve with maple syrup!
