Roasted Radishes The Potato Sub You’ve Been Looking For

Roasted Radishes – The Potato Sub You’ve Been Looking For. If you’re looking for a root vegetable to munch on, minus the carbs, radishes are your new best friend.

Ingredients:

  • 2 bunches of radishes, about 20
  • 1 tbsp avocado oil or vegan butter (melted)
  • salt/pepper to taste

Instructions:

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. Cut radishes in half and spread out on the baking dish.
  3. Drizzle on the avocado oil or melted butter, coating the radishes evenly.
  4. Sprinkle with salt and pepper, mix around then let it bake for 20-25 minutes or until fork tender.
  5. Remove from oven and enjoy right away.
