    (12 ounce) package vegan chicken, free strips
  • 2

    teaspoons all purpose Greek seasoning, Greek Seasoning Mix
  • 1

    lemon, juice of
  • 14

    cup olive oil
  • 16

    ounces lettuce
  • 1

    tomatoes, diced
  • 1

    cucumber, peeled and diced
  • 1

    onion, diced
  • 2

    ounces extra firm tofu, crumbled
  • 14

    cup black olives
  • 16

    ounces fresh Baby Spinach
  • DRESSING

  • 1

    lemon, juice of
  • 2

    tablespoons olive oil

directions

  • Place Chicken-Free Strips in a baking dish.
  • Sprinkle with spice mixture, Recipe #425441.
  • Mix together lemon juice and melted butter; pour over chicken.
  • Bake as directed on the Chicken-Free Strips package, basting occasionally, until done.
  • Toss lettuce, tomato, cucumber, onion, firm tofu, black olives, and fresh spinach. Cover with the cooked Chicken-Free Strips.
  • Mix lemon juice and oil and pour over salad.
