- 2 garlic cloves, minced
- 1 ½ cups arborio rice
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 3 thyme sprigs
- ½ cup dry white wine
- 1 qt. vegan “chicken” broth or vegetable broth
- ½ cup grated vegan Parmesan cheese
- 2 tablespoons vegan butter (such as Earth Balance)
- 1 teaspoon lemon zest (from 1 lemon)
- 2 tablespoons chopped fresh flat-leaf parsley
